1 garlic clove minced
1/4 tsp salt
1/4 tsp black pepper

2 bone chicken breasts split and trimmed

1 tsp olive oil
Salt and Pepper To Your Preference

1 tsp thyme minced or buzzed
1 tsp oregano minced or buzzed
Small Bowl 5
1/4 cup sun dried tomatoes patted dry and minced/buzzed
1 Small Shallot minced/buzzed
1 1/2 tbs red wine vinegar
1 tbs capers rinsed and minced/buzzed
1/8 tsp salt
1/8 tsp black pepper

AIR FRYER Paper Towels Small Chopper or Food Processor (optional) Aluminum Foil Serving Platter
DO WITH HOW IMPORTANT
Toss 1 To Coat
Transfer Coated Potatoes To air fryer basket
Pat 2 Dry with paper towels
Rub 3 Onto chicken
Sprinkle 4 Onto chicken
Arrange Chicken Breast skin down on top of potatoes in air fryer basket Even spaced apart
Place Air Fryer Basket Into the Air Fryer
Set Air Fryer Temperature 350 F degrees
Cook Chicken and Potatoes UNTIL potatoes are tender and chicken is cooked. Flip and rotate halfway through cooking. Chicken registers 160 F Degrees; About 20 to 25 mins
Transfer/Tent Chicken and Potatoes To a serving platter and tent with aluminum foil
Let Rest Chicken and Potatoes 5 mins.
Pour off/Reserve Juices from Air Fryer Keep 1 1/2 tbs juices (add oil if not enough)
Combine 5 + 1 1/2 tbs Juices from Air Fryer
SERVE Chicken and Potatoes with Tomato Relish
