The Best Swedish Meatballs

The recipe yields either 12 large or 20 small meatballs from 1 lb of beef, so portions are modest when serving six. Turn the meatballs frequently so they brown evenly without breaking. Brown the butter-and-flour mixture carefully, then add the broth and cream gradually while whisking to keep the gravy smooth. Keep the final simmer gentle.

🔪 MISE IT
- Finely chop enough onion to measure ¼ cup.
- Chop 1 Tbsp fresh parsley.
- Measure ¼ cup breadcrumbs, ¼ tsp allspice, ¼ tsp nutmeg, ½ tsp garlic powder, ⅛ tsp pepper, and ½ tsp salt.
- Crack 1 egg into the medium bowl.
- Add 1 lb ground beef, the measured ingredients, onion, and parsley; mix just until combined.
- Roll into 12 large meatballs or 20 small meatballs and arrange on a tray.
- Measure 1 Tbsp olive oil and 1 Tbsp butter; set beside the skillet.
- Measure 4 Tbsp butter and 3 Tbsp all-purpose flour; keep separate but together at the stove.
- Measure 2 cups beef broth.
- Measure 1 cup heavy cream.
- Measure 1 Tbsp Worcestershire sauce
- Set out salt and ground black pepper for seasoning the finished gravy to taste.
🍳 MAKE IT
- HEAT a large skillet over medium-high heat. ADD 1 Tbsp olive oil and 1 Tbsp butter.
- ADD the staged meatballs. COOK for 7–8 minutes, turning frequently, until browned on every side and cooked through. TRANSFER to a plate and COVER with foil.
- ADD 4 Tbsp butter and 3 Tbsp flour to the skillet. WHISK until the mixture turns brown.
- SLOWLY STIR in 2 cups beef broth and 1 cup heavy cream. WHISK until smooth and combined.
- ADD 1 Tbsp Worcestershire sauce. BRING to a gentle simmer until the gravy begins to thicken. SEASON with salt and pepper to taste.
- RETURN the meatballs to the skillet. SIMMER gently for 1–2 minutes.
- SPOON the Swedish meatballs and creamy gravy over prepared egg noodles or mashed potatoes, if using. SERVE!
