- Adjust the oven rack to the upper-middle position and heat the oven to 450°F.
- Pulse the Red Pepper-Caper Sauce in the small food processor until combined, minced, and relish-like, not puréed.
- Taste the sauce and season with additional salt and ground black pepper if needed.
- Sprinkle the Seasoning evenly over both sides of the Salmon.
- Wrap each salmon fillet with 2 slightly overlapping slices from the Prosciutto, leaving some salmon exposed if needed, and place each fillet seam-side down.
- Heat the Skillet Oil in the 12-inch oven-safe nonstick skillet over medium-high heat until just smoking.
- Place the wrapped salmon fillets in the skillet and cook until the prosciutto is lightly browned on the first side, about 2 minutes.
- Flip the salmon gently with tongs and cook until the prosciutto is lightly browned on the second side, about 2 minutes.
- Transfer the skillet to the oven and roast until the salmon registers 125°F for medium-rare, about 5 minutes.
- Remove the skillet from the oven with pot holders.
- Transfer the cooked salmon to a serving platter.
- Spoon the sauce over the fillets.
