🔪 MISE IT

Chicken [Cutting Board]

  • 🍗 4 boneless skinless chicken thighs, cut into 1-inch pieces

Coating [Small Bowl]

  • 🌽 1/4 cup cornstarch

Sauce [Small Bowl]

  • 🍚 3 tbsp rice vinegar
  • 🥢 3 tbsp soya sauce
  • 🥄 2 tsp hoisin sauce
  • 💧 1/4 cup water
  • 🍬 3 tbsp granulated sugar
  • 🌽 1 tbsp cornstarch

Frying Oil [Medium Saucepan]

  • 🫒 3–4 cups vegetable oil

Aromatics [Small Food Processor]

  • 🧄 2 cloves garlic, buzzed
  • 🫚 1 (1-inch) piece ginger, peeled and buzzed
  • 🌶️ 1/2 tsp red chili flakes

🍳 MAKE IT

🛠️ Tools: large saucepan, plate for chicken, serving platter, tongs, slotted spoon

  1. Heat the vegetable oil in the saucepan over medium-high heat.
  2. Toss the chicken pieces with the cornstarch coating and let sit while you mix the sauce.
  3. Whisk the rice vinegar, soya sauce, hoisin sauce, water, sugar, and cornstarch together until smooth.
  4. Add the coated chicken to the hot oil and fry until crispy and cooked through.
  5. Remove the crispy chicken from the pan with a slotted spoon and set it on a plate.
  6. Drain all but 1 tbsp oil from the pan.
  7. Add the buzzed garlic, ginger, and chili flakes and cook until fragrant, about 30 seconds.
  8. Add the crispy chicken and the sauce mixture to the pan and toss to coat.
  9. Stir until the sauce thickens, about 30 seconds.
