- 🥄 2 tsp hoisin sauce

- 🌽 1 tbsp cornstarch

- 🫒 3–4 cups vegetable oil
Aromatics [Small Food Processor]
- 🧄 2 cloves garlic, buzzed
- 🫚 1 (1-inch) piece ginger, peeled and buzzed
- 🌶️ 1/2 tsp red chili flakes
🍳 MAKE IT
🛠️ Tools: large saucepan, plate for chicken, serving platter, tongs, slotted spoon
- Heat the vegetable oil in the saucepan over medium-high heat.
- Toss the chicken pieces with the cornstarch coating and let sit while you mix the sauce.
- Whisk the rice vinegar, soya sauce, hoisin sauce, water, sugar, and cornstarch together until smooth.
- Add the coated chicken to the hot oil and fry until crispy and cooked through.
- Remove the crispy chicken from the pan with a slotted spoon and set it on a plate.
- Drain all but 1 tbsp oil from the pan.
- Add the buzzed garlic, ginger, and chili flakes and cook until fragrant, about 30 seconds.
- Add the crispy chicken and the sauce mixture to the pan and toss to coat.
- Stir until the sauce thickens, about 30 seconds.
