MISE IT

Prepare the Pan [8-inch Square Baking Pan]

Mix Dry Ingredients [Large Bowl]

  • ๐Ÿง 1/2 tsp baking soda
  • ๐Ÿง 2 tsp baking powder
  • ๐Ÿš 1/2 cup sugar
  • ๐ŸŒพ 3 cups all-purpose flour

Cut in Butter [Small Bowl]

  • ๐Ÿงˆ 10 tbsp butter, chilled, cut into 1/2-inch pieces

Fruit [Pint Container]

  • ๐Ÿซ 1 pint blueberries, rinsed

Wet Ingredient [Measuring Cup]

  • ๐Ÿฅ› 1 2/3 cups buttermilk, chilled in fridge

Honey Butter Finish [Small Bowl]

  • ๐Ÿฏ 1 tbsp honey

MAKE IT

Get Started

  1. Adjust the oven rack to the middle position.
  2. Preheat the oven to 425ยฐF.
  3. Brush the bottom and sides of the 8-inch square baking pan with the 1 tbsp butter until fully coated.

Make the Biscuit Dough

  1. Whisk the baking soda, baking powder, sugar, and flour in the large bowl until thoroughly combined.
  2. Add the chilled butter pieces to the flour mixture.
  3. Smash the butter between your fingers until you have flat, irregular pieces coated with flour.
  4. Add the rinsed blueberries and toss them with the flour-butter mixture using a rubber spatula.
  5. Pour in the chilled buttermilk.
  6. Gently stir with the rubber spatula until no pockets of flour remain.

Pan and Bake

  1. Transfer the biscuit dough to the prepared baking pan.
  2. Spread the dough evenly with the rubber spatula.
  3. Cut the dough into 9 equal squares by making 2 cuts in one direction and 2 cuts in the other direction. Do not separate the squares.
  4. Bake until browned on top and a knife inserted comes out clean, about 40 minutes.

Finish and Serve

  1. Microwave the pinch of table salt, honey, and 2 tbsp butter for about 30 seconds.
  2. Whisk until smooth.
  3. Remove the biscuits from the oven and let them cool in the pan for about 5 minutes.
  4. Lift the biscuits out of the baking pan and place them on the wire rack, top side up.
  5. Brush all of the honey butter over the tops of the biscuits with the silicone brush.
  6. Let cool for about 10 minutes.
  7. Cut along the scored lines and SERVE!
